On most large aircraft steering is controlled by a 'tiller', a miniature steering wheel to the left of the captain (and the right of the FO in airbuses). The rudder pedals in these planes only activate a few degrees of nosewheel steering (if any at all), so you can't really steer well with them.

http://tinyurl.com/4jxamNearly all small planes are steered by the rudder pedals, the brakes, or a combination thereof. Some planes like the Aerostar, and maybe the Twin Commander, are steered using your thumb on a rocker switch.
