When should I let the passenger get out of their seats during a clime or increase in speed or desents ?  I have no idea what real world procedures are anyone know ?

Never let them out of their seats! :-)

Well, that's usually up to the pilot. Some like to turn it off at 10.000ft, while others just leaves the knob in "auto" mode (Boeing, Airbus etc), which means that as soon any leading edge device or landing gear is extended, the fasten seat-belt light is ON

Also don't forget the 2 chimes on the non smoking sign when descending thru 5000ft just to notify the cabin to be seated for landing, don't know if ALL operators do this though  :)

Most flights I've been on, the seatbelt light goes off when you reach cruising altitude, and stays off until descent into the destination airport.  They also turn it on if the plane experiences turbulence.

Here's another seat belt rule for any of you flying into the Washington, DC, area: post 9-11 regulations state that all passengers must remain in their seats for the final half hour of the flight.
This would apply to Ronald Reagan International, Dulles, and I believe Baltimore-Washington.

how do you fly with passengers on the plane and how do you use the seatbelt sign? lol...

yeah, im not sure either   i think i have seen the seat belt sign, but is there a way to have passengers?

i downloaded a program called FS boarding which "loads" passengers onto the plane at the gates. It doesnt really do it but it gives you a time on how much longer untill you depart and it tells you how many passengers have came out of the maximum seats on the plane. You can refuel and it gives you a timelimit untill refuling is complete and etc. Its pritty fun to have it actually do it but there is no graphics of it doing it just noises and limits but it adds more realism to the game. its at http://www.flytradewind.org/hangar/util.htm but i cant get it to connect to the game to automatically push back the plane :/ but besides that its all good.

Got that from a real 737 pilot, but I'm positive there are different routines in each airline  :)

There are chimes at various altitudes, 10,000 is one, both going up and down. I imagine Nexus's sources airline also goes with 5000 aswell having been told that, and also some give a final chime at the arrival of the cruising altitude.
And please people, when they say leave your seatbelts on while seated, do so. People have unbuckled their seatbelt, only for their plane to hit some clear air turbulence, and they are thrown from their seats, in some cases hitting the ceiling above them. On too many flights have i seen people fall asleep ignoring this, only to think, it'll serve them right if the wake up the other side of the plane with a broken arm.

By law, pilots have to sound the chimes at 10,000 feet to alert the flight crew that they've cleared the "sterile cockpit" restrictions, during which cabin crew can only call the pit in an emergency.
