I see some screenshots around here of planes in formation with other planes, and how on earth do you do that?

You can use Traffic Tools to add AI military jets flying around, then you'll know where they are and can fly along side and take your screenshots.

 Cuz it's awefully tricky staying in formation with a Cessna 172 while flying an F/A-18F... it's tricky, but very possible.
