Do you ease into the throttle or just gun it...........Just gunning it will cause that sometimes........Also make sure your rudder is centered.......To do this make sure the NUM LOCK is turned off and press 5 on the Number Pad.to the right,  then you can turn the NUM LOCK back on...........Other than that I dont know, if you are still having problems maybe someone else can suggest a fix to the problem  ;D

Used to have the same problem:

Change the slider for "Rudder" in the controls for the joystick in the other way that your aircrafts are turning.

Make sure your controller is calibrated.  You rudder / slider might be stuck to the side.

I have the Saitek X45 flight stick with the separate throttle/rudder, and about one every 2 weeks or so, my rudder will lock to the right. I just recalibrate it which takes about 20 seconds, and viola, good as new.

Otherwise you might be getting the gyro effect.
