You probably could use xml do this with but you will need the exact location as to where the bridge needs to be. You also need to know the code for a bridge. You would then have to remove the old bridge A flatten switch might work for this. But I am not sure if a bridge is considered a building.
There are probably other ways of doing this as well.
EOD might even work I just do not know that much about it to know for sure. 8)

No, these are the only ways to do it.

If a bridge is in the right place but the roads don't align you can reposition the roads using CoastLineMaker.

If the bridge is partly in water, you can realign the coastline to match the bridge position using CoastLineMaker (and do the roads at the same time if you wish).

If the bridge is hopelessly wrong (  ??? ) you can create a new 'simple' bridge using the default bridge elements using the XML scenery SDK and take out the old one with an exclude over its reference point.

Alternatively, you can create a complete new bridge object using eg EOD or GMax and incoporate it in a new scenery including an exclude using either Airport or FSSC
