Its all the aircraft that fly in the sim without any input from you.

AI means Artificial Intelligence.

Or in other words-computer-controlled aircraft...
That's what adds to your sim more life-it would be much more boring to fly in empty skies and land and take off in empty and lifeless airports.

Note that you can add to your AI traffic any aircraft you want(and available, and intended to be ai aircraft),create for your ai fleet any flight schedule you want-wich makes it much COOLer

if you want realistic real world airlines flying through your skies check out www.projectai.com they have loads of airline packages that are easy to install.. they require the installer program first though

also if you go to the settings of flight sim you will find a slider that will have traffic on it.. set this to 100 to get the most ai in your skies turn it down and some aircraft will be removed to help your frame rates :D

hope this helps

Project AI is free, yes.  The problem with the default AI traffic is that it's all going to be the crappy bogus airlines that MS created.  Project AI lets you add the airlines of your choice, and they're real airlines to boot.

And yes, they land, take off, fly around....all of that.

You haven't experienced simulated reality until you've sat on a crowded taxi way at O'hare for 2 hours. ;)
Great edit, Bob.

Google it.
