Check your screen res under SETTINGS where you can create a flight. I had super-ultra-jaggies until I upped from 800 x 600 to the highest possible. No more blocky, chunky buildings and no jaggies...
My system: AMD Phenom 9500 cpu, 2 x eVGA e-GeForce 8800GTS Superclocked vidcards (640Mb DDR3 each), Zalman "sunflower" 9700 fan, Gigabyte GA-M57SLI-S4 mobo, 4Gb G.Skill PC2-6400 DDR2 800Mhz RAM, 2 x Sony 20X DVD writers, Thermaltake Toughpower 8

I have messed with the settings quite a bit. I can easily push all the sliders to the max and still get perfectly good frame rates, but some stuff just doesn't seem to be there at all.

Night flights are without moon or stars, regardless of the time or date, there are very few detailed images of scenery.

All roads look like dirt tracks, even major highways etc.

No matter what I do I can't seem to get the East River in New Your City to show up.

And so forth and so on.

I figured that was just the way the sim ran until I checked out some of the circa 2004 screen shots. A lot of them look like what I see on my machine, but a few of them are spectacular. I must be missing something somewhere!

Shooting stars can be seen in any view.  I've seen several both in my FS2002 days and current FS2004.  They are completely random, but just like real life they are small and you either see them or miss them in a blink of an eye :P

As for JLCGull...almost sounds like you have texture files missing or something.  If FS9 is maxed out there should at least be stars, don't always see the moon.  FS is not going to have real looking roads, they are more meant to be seen from a higher altitude then anything.  Most of the realistic scenery you see in shots is addon mesh.

As I mentioned for the stars it really sounds like a missing texture file somewhere, you might try a reinstall and see what happens.  Or if you've added any environment enhancements a texture may be misplaced.

But I reserve the right to be completely wrong on that so someone else feel free to chime in :P
