Just to kick it off with a BANG!  

What water textures would one advise for high altitude flying?

In my opinion, it dosen't matter. Although for higher altitudes in my experience you want to set your visibility from 30-40 miles, as the water textures aren't as detailed in the distance.

I use Waterzone

I say that the water from silver wings is impressive. It matches very well with the scenery and with most weather.

Yeah, I use Waterzone, just I've been noticing lately that the water curves and shows clear discoloration a long ways out from where I am.

Note, this is all at 35000 feet up, not just bush flying.

Either you haven't set the water to reflect in the display menu, or you have a video card that doesn't support DirectX 9.0.

In that case, if you really want those reflections, you need to upgrade that video card. But I'm sorry to say that if you don't have the money, then you're gonna have to deal with it.
