In real life, jet pilots will dump fuel in order not to exceed the landing weight prior to landing.

I agree!
However, let me add that jet fuel tanks aren't filled to the brim. Pilots estimate the amount of fuel they need along with a 45 minute reserve. In the event of an emergency (ex. landing gear malfunction), jets generally fly around in patterns to burn off a lot of fuel before landing.
In normal situations, I don't know how often pilots dump fuel in order to meet the maximum landing weight of their AC.
The airlines have flight planners that do all of the fuel calculations so pilots usually do not have to worry about that. However they can ask the flight planner to increase the fuel load if he/she has a good reason.
One weight you never want to go over is MAX TAKE OFF WEIGHT.
