Lots of options, Jet Ranger. As recommended above, you can just 'suspend' ATC by acknowledging hand-offs and then not contacting later stations until you are ready.
Or:-
1. You can put up with ATC cutting you off and file a new IFR Flightplan later (that option is available in the ATC window, just make sure that your new flightplan shows the approx. height that you're at when you re-file).
2. You can junk IFR and file a VFR flightplan in the first place. That carries the disadvantage that ATC will only allocate you a runway once you're within 30 miles, you have to handle all other aspects of the approach yourself - but it's a lot more fun, you don't have slavishly to follow a prescribed course.
3. Press 'P' for pause if you want to get yourself a cup of coffee, so the flight (and ATC handoffs) are 'frozen' while you're away.
Depends in some ways what you want to get out of FS. The fun for me is in flying trips as 'realistically' as I can - not just setting 'GPS Hold' and then leaving the computer to run itself until I'm close to my destination. Obviously that means either choosing shorter trips or saving trips in flight and coming back to them later - but, for me anyway, it's more fun in the end.
