Will someone please tell me how to get the nose doors to open on my AN 124 and AN225.

It should be in the readme. Try SHIFT+E+1/2/3/4 those are the traditional settings for various doors.
There are two types of aeroplane, Spitfires and everything else that wishes it was a Spitfire!

OR........ you may need to assign keys for the Concorde nose/visor.
