2 quick questions.

Is there any way to stop the atc dialogue box from popping up everytime they call other traffic, when I have traffic up 100% it's really annoying. Also in FS2002 when you selcted your crusing altitude, for example 27000ft you could just put the altitude in you altimeterand cruise without atc bothering you, but in FS 2004 they may tell you to climb to 8000ft and then when you get there they tell you to climb to 16000ft and so on to you get to your cruising altitude. Can you somehow change this? Thanks for the help.

1) You can switch ATC text off, but I believe this switches it off altogether; anyway I was not aware that directions given to other a/c were shown in the text box. Are you sure?

2) That's called vertical separation. In real life you are bound to climb to the cruise altitude via intermediate altitudes, following ATC directions. Remember it's "as real as it gets". If you are not willing to simulate, but rather to play around, then I suggest you pick up a small single engine GA plane, pick a random airfield in USA and start flying low and slow, VFR, using your eyes to spot traffic... don't use the radio altogether.  ;)

To turn off the ATC text display goto Settings>ATC.. and uncheck [ ] Show ATC text

At that time [1909] the chief engineer was almost always the chief test pilot as well. That had the fortunate result of eliminating poor engineering early in aviation.

In the ATC Settings dialog box, de-select the Auto-open ATC Window check box and click OK.
