With regards to VCs, the current/default one's aren't the best, but there are many people working on add-on aircraft with very impressive VCs.  

And Flight Dynamics, like many have said, X-plane has extremely accurate flight dynamics, the first time I flew the C172 I was truly surprised and impressed on how well realistically the aircraft flew.  I did alot of stalls and pattern practice etc... and I was very impressed with how much it actually felt like flying the 172s I usually fly.  In the end, only having real stick time on a C172 for my PPL, I can only speak for the flight dynamics for the C172, but I think they are amazing and very realistic.

And an interface that doesn't make UNIX seem user-friendly?

I have been flying x-plane since version four when it still cost a zillion dollars to own, and I don't think the user interface has changed at all. It could really use a facelift.

Good thing is after all this time at least I know how to use it. ;D
