im a total noob to the fs2004 plane editor and i am a bit confused bye how the flght dynamics are set up are there any tutoreals out there that show me what everything does and plane standers  

You might find something in the learning center on this.
Or you can use the old try and learn method. The editor will backup you file for you so if the results are not what you expected you can always go back to the old way.
Sometimes you learn more by doing then reading.
Just make sure no passengers are on board when you test it
