For FS 2004, the best by far (my opinion) is "cv_74.zip", a working model of USS JOHN C.STENNIS (CVN74). Clasassified as a "scenery add-on", it is VERY accurate visually, has, a "hard deck" that can be used for takeoffs and landings ("fly-on" Touch and goes and "deck - rolls" for takeoff) and can be upgraded for cat shots and arrested landings with an additional freeware package called "rcbco-20.zip". Both can be found at various FS websites.
Depending on your level of experience, it may be best to start with the first file, CVN74 for T&G and deck rolls. Then add on the cat/trap features after you have studied the info in the rcbco-20 download - it is a little sophisticated for a beginner, because it requires some changes to the panel.cfg and aircraft.cfg files to make the cat/trap features work. Also, for landings, you need a plane with a tailhook - actually modeled in, or a fake job added into the aircraft.cfg file - that will work also.
I have the ALPHA T-28 series payware, which has the Carrier-capable T-28C version with an operating tailhook; it is excellent in all respects and works well on CVN74. In real life it couldn't be catapulted (no bridle or launch bar hookup provisions), but the rcbco-20 will let you take a cat shot in anything you want to (I have to laugh - a C172 would become a ball of tinfoil in real life!!)
The only bitch I have is that it is all titled and referred to as "STENNIS CV_74" - for Navy vets, that's kinda an insult, because the ship officially is USS JOHN C. STENNIS (CVN74); she's a nuke, and that is her commissioned name.
