For freeware jets, it doesn't get better than the Avro panel project by Mathias Lieberecht for the Avro RJs/BAe146s - great realistic panel, great documentation.

The TinMouse II panel for the 737-200 is also very realistic, but doesn't yet have any detailed instructions included on how to use it, although there is a long readme file. Best used with the TinMouse model by Terry Gaff, or the Kittyhawk/Erick Cantu model.
