It seems there's 'tricks' to everything. To taxi old taildraggers in FS9 as you describe using diff-brakes, simply engage opposite brake BEFORE the crate (any vintage in FS9) achieves the desired direction (heading on the ground). This gives the plane the requisite time to straighten itself out.

p.s. we fly the old FS9 crates regularly and have pictures to prove it; also, using ALT+4, one can use the mouse to open only lefthand or righthand engine on the Tri-Motor to turn on the ground
