What is the best series of Boeing 707 available for FS2004?, I wonder if packages like the Proyect Fokker are available for it.

Try over at Historic Jetliners Group (HJG). They have tons of the vintage birds -- many of which have been updated for FS2004

If you use George Carty's panel with a 707-320 model from HJG you will need to alter the fuel tank config lines on the aircraft.cfg of the HJG model to match those on George Carty's 707-420 model or else the engines won't work right with the panel and you will have only the outboard two engines running, effectively it will be a twin and believe me, you need all 4 to get a 707 off the ground with any amount of load on board  ;)
