Do I have to stay within the boundaries set by the picture or can i go off of that? Will that mess up the model?

I'm not SURE what you mean, but I expect you are referring to the way the texture sets are set up. If you go outside the bounds of what FS recognizes, the textures will simply not show up.
IE--If you paint on some part of that canvas that doesn't show in the sim, it will not be rendered.

as above.. but if you overlap onto something else, then obviously that will affect other parts.

i think he means like on the extra300s if you paint outside the lines for the fueslage or whatever.. will it screw up everything else? i dont think it does becuase they use a program called UVmapper and this puts everything in a texture picture so i would say it wont muck everything up, but hey, try it

Sometimes a map will have empty spaces between the important parts. Sometimes those empty spaces are used for other things, even if they don't look like it. Sometimes the map is so tight there just isn't any spare room at all! The best method is usually trial and error, no two maps are alike.
The best ones are from Mike Stone, Tim 'Piglet' Conrad and Warwick Carter. Good layout, easy to understand, and some of them include a set of templates just for repainters!

It's always prudent to monitor one's work as it progesses thru the repainting procedure. That's why some of us bought FSRepaint; with one's paintprog, DXTbmp and FSRepaint open, it simplifies these monitoring requirements.
