Plane Ground Behavior and air file tweak question

I have 2 planes that I want to tweak because of the way they behave on the ground. The first is Thomas Ruth's a340, and the other is the b797 concept plane. The a340 begins to go straight when I want to turn sometimes. It will initially turn but then for some reason, it will just start moving forward even though the wheels are turned. The b797 seems to require a very long runway to land on because the reverse thrusters are almost ineffective and so are the breaks. Are these things that can be tweaked in the plane's air config. file?

you can tweak it in the Aircraft.cfg , you can open it with notepad (make a back up first)
Aircraft.cfg modifies the *.air file
you can change all flight parameters in this area

Thanks alrot. I'm familiar with the Aircraft cfg just not sure which parameters would affect certain things such as steering.
