After wing extrusion the cessna looks like this...

How can I get more vertices or whatever them blue dots are called in order to shape the wing correctly? :)

Use the slice tool/command. This would be under the modify tab.
However, ...
I would recommend that instead of extruding the points out from the side of the fuselage part, that you create a separate part for the wing(s).
Remember a wing is just a flattened fuselage ....

there's countless ways to shape a wing! some start with extruded splines, some start shaping with a box or a compressed cilinder, i think it depends more on the right method for the right model. but always "Slice" and "extrude" are the common method to egt them right. dunno i've learned by the SImax tutorial here at SimV (really works!) and the rest is trial and error.
