Take one step back.
FOr the moment, forget about using gmax, since unless you have the FS2002 Pro gamepack, you won't be able to get the model converted.

From 3DSMax5, can you save your model directly into a DirectX (*.x) file? If not, there is a plugin that will do it.
You can then run makemdl.exe standalone, open the *.x file as your input file and export as a *.mdl file.
You still have to manually setup your flightsim folders, copy the reference aircraft.cfg *.air files, make the panel, sound, aliases, etc.
Note - I presume that you've made your model with the appropriate part names/tags for the animations....
