XP has a built in clone facility for HDs. Right click on the drive you want to copy and choose properties. Then click on tools and you'll find backup at the bottom

Failing that go to download.com and try one of the many HD cloning programs they have on offer

Well, I'm not getting that option... I made the exact same partitions and all, and I can simply copy and paste files on my D and E drives to the G and H drives, but would copy/pasting the C to F leave behind things like registry, therefore rendering the copy of XP on the new drive useless?

You can also create a ghost image of your old drive and ghost your new drive with that image.
Nortan Ghost has that ability. I've never tried it though. I use commercial hardware to ghost my HD's, but that costs money and you probably don't do it as much as I do.
