Does anyone know how to convert FS Flight Videos into a format that can be usable for editing in things like Movie Maker?

It's not a matter of just file conversion. You need to record them in a format that MM can handle.
An awesome tool for this is called Fraps. (Google it.) It will capture your video and let you import it into MM.
Another option, if you've got the hardware to do it, is to plug a digital video camera into your video card. Not everyone can do it, but the result is great.

Thanks for your help. Unfortuanately I do not not have a digital video camera so i cannot do that lol! However I will attempt to use this Fraps program that you speak of

fraps is awesome, but I've noticed that when I'm sampling video and sound while running fS9, my fps drops to half what fraps shows me normally (it's also a benchmarking tool).

Fraps is rather resource intensive and is limited by to certain resolutions.
To record on-screen data, I just connect my dvd burner to my computer (the home entertainment ones, not the comp ones) and it works great without any fps drop and at any res.
The setup is kinda tricky though with VIVO, but it works much better than fraps though it won't show fps, lol.
