I've been away from FS since the years of FS2000. I now have FSX/ACCELERATION and cannot find full screen options as FS2000 had. HELP!!

Hello. It's the same in all versions of MSFS. Press Alt + Enter to toggle between Windowed & Full Screen modes.
When in Full Screen mode press Alt to display the menu bar. Press & hold Alt to hide it.
