Right!... Help and advice please!

At my ATC Sqn a project we have just undertaken is to redevelop the old flight sim... (See pic below)

Now... Muggins here has been put in charge of this project, but I have not got the foggiest idea about how to go about building a flight sim!
Basically, the way we want to work it is so that we have a control station at the back of the flight sim, one monitor for the outside front view and another monitor with a wooden fascia over the top to give the impression it is a cockpit.
We have decided to base the sim on a rudimentary hawk style cockpit / generic jet trainer using the FS2004 sim.
If anyone could give me any advice on what actual components I would need, hardware and software. And other information on how powerful the computer needs to be to run 3 monitors and get a good decent FPS in FS2004.
I've got the basics covered, I just need advice on how to get it all running!
