Found this puppy while doing some research:

Looks like you can integrate up to 2 HD44780 lcd displays thru your printer port and a separate 5v supply. Looks like you can setup an auto pilot or a radio stack. Pretty much anything that has offsets in FSUIPC. Those HD44780's are pretty cheap and even come in different high contrast colors.

Actually you can drive up to 3 HD44780 through a single parallel port (I did it for my ATR72 autopilot module where I use 3 HD44780 displays) but you loose the chance to use the 8 "user defined characters" that HD44780 offers.
